October and November are wonderful months to visit Italy. #smallgrouptoursitaly. True, the grape harvest is past but there may still be some truffles to snuffle out and the olives are ready to pick. Olives need to be picked in one day, like the grapes and rushed off to the olive press immediately. Some folks like using the funny mechanized implement that looks a bit like an umbrella. Others do it the old fashioned way, with ladder and hand picking.
The local community press is a fun place to gather. Once you’ve weighed them in the olives get dumped into the press with all your neighbors’ olives. And then you sit around drinking wine and eating a picnic lunch while waiting for your oil to be processed. Everyone catches up on the latest news or gossip then gathers up the % of oil their olives weighed in at when they were brought in.
Oh the flavor is heavenly. The peppery aftertaste will disappear after a few months but used within that first year of pressing the oil will stay fresh. I don’t cook with it until it’s a year old just use it fresh on everything from salads to meats and vegetables.
